I used to have a proper job. Seriously. A chunk of my time was spent travelling around Scandinavia flogging medical equipment. Most important was the breakfast buffets in the hotels, and in one I discovered salmon cured with lingonberries and vodka. It was awesome, so here is our take on it. Blueberries and raspberry vodka give a fruity note, with the smoke taking a back seat on this one.

 

  • Ingredients - Scottish salmon (fish), salt, demerara sugar, raspberry vodka, blueberry puree. Apple, alder and beech smoke.

 

- Perfect for freezing

- Minimum 5 days shelf life from despatch

Deliciously different

Possibly my favourite...but really is hard to choose...I had several different ones sent to my hosts whilst staying in UK and brought Augustus Gloop back to Spain with me..
