We choose the most reputable salmon farms in Scotland to supply our PGI status salmon. We never use cheaper, fattier, Norwegian fish. The salmon is sustainably farmed and considered sushi grade (super fresh!)
The salmon is filleted and then slow cured in our unique blend of Dead Sea salt and demerara sugar. The slow cure firms up the texture and gives the salmon a more meaty texture. It is not greasy or slimy like other smoked salmon can be.
The Margarita is infused with tequila, coriander, lime zest with a hint of chilli. It is very lightly smoked over apple and beech wood for a very subtle smokey flavour. Herby, fresh with a mild spice.
After smoking, the salmon is rested overnight before being sliced by hand in our little Sussex smokehouse. We choose to slice the salmon in thicker, vertical, more decadent slices. Once our customers have tried it this way they never go back! A truly luxurious taste experience and one which will have you wishing everything was booze infused!

Arrived still chilled in its woolly wrapping. The margarita salmon was absolutely delicious with just the right amount of margarita flavours & almost melted in the mouth. Will definitely buy again
I struggle to decide which is my favourite flavour because I like them all so I defer to my family on this and they have voted Margerita as the family number 1. It's got a lovely subtle flavour with a hint of wood and lime and we think some chilled slices go very well on slightly salted crackers. It also has a lovely texture. Some supermarket-bought smoked salmon can be either rubbery or quite greasy but the smoked salmon we buy from Pished Fish has a lovely melt in the mouth quality. Definitely worth 5 stars.
