We discovered this fellow on a canoeing expedition down the Dordogne. The water was slow and lazy, the sun beat down and the local cafes and tabacs called our names. We made land at Beynac-et-Cazenac where we took our lunch next to the river. A simple smoked trout dish was offered, and while delicious, was lacking something. A rather energetic toast was made whereby a little pastis was spilled upon the trout, and as if by magic transforming the meal into something truly marvellous!
