We choose the most reputable salmon farms in Scotland to supply our PGI status salmon. We never use cheaper, fattier, Norwegian fish. The salmon is sustainably farmed and considered sushi grade (super fresh!)
The salmon is filleted and then slow cured in our unique blend of Dead Sea salt and demerara sugar. The slow cure firms up the texture and gives the salmon a more meaty texture. It is not greasy or slimy like other smoked salmon can be.
The Designated Driver is, of course, not infused with booze, but smoked over juniper and cherry woods. It's our smokiest one, but still allows the creamy, buttery flavour of the fish to shine through.
After smoking, the salmon is rested overnight before being sliced by hand in our little Sussex smokehouse. We choose to slice the salmon in thicker, vertical, more decadent slices. Once our customers have tried it this way they never go back! A truly luxurious taste experience and one which will have you wishing everything was booze infused!

I received my order today of smoked salmon it was absolutely delicious.
I have been a Fishmonger for over thirty years now and i have tasted lots of different types of smoked salmon and i have had the pleasure of curing smoked salmon myself at Gunns Fishmongers in Brighton many moons ago.
This smoked salmon is lovely and i rate it right up there and in my opinion it has the perfect balance of smoke, salt, texture and flavour i would highly recommend it to anyone thinking of buying a quality smoked salmon.
lastly i would to say i am really happy to see traditional skill of curing fish continues and what i tasted it is in safe hands at The Pished Fish.

This iis my first entry to the world of Pished Fish and I can only say that I am delighted. I live on my own so most of the fish is in my deep freeze. On Easter Sunday I share a good serving with friends.The comment from one was "You can actually taste the fish..............too often it is too salty" I did not see the driver!
